Crispy Baked Basa Fillets

Makes: 4 servings


Things You'll Need:

1 1/2 Tbsp. vegetable oil

1 1/2 lbs. basa fillets

3 Tbsp. light mayonnaise

1 Tbsp. fresh lemon juice

1/2 cup breadcrumbs

1/4 cup cornmeal

1/2 tsp. salt

1/4 tsp. cayenne pepper

8 half lemon slices


Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Brush the paper with oil. Cut the fish into 8 equal pieces; rinse in cold water and thoroughly pat dry. Set the fish in a bowl with mayonnaise and lemon juice and toss to coat. Combine the remaining ingredients, except lemon slices, on a sided plate. Coat the fish in the breadcrumb mixture and set on the baking sheet. Bake for 8 minutes, and then turn each piece over. Bake 4 minutes more, or until cooked through. Serve 2 pieces per serving, garnished with lemon slices.

What to serve alongside:

Serve the fish with a couple of the side dishes found in our website recipe collection, such as Boiled, Smashed and Fried New Potatoes, and Rainbow Coleslaw.


Instead of basa, make this dish with another fish fillet, such as snapper or sole. For an even crisper crust, use cornflake crumbs in the coating mixture instead of breadcrumbs. If you serve the fish with tartar sauce for dipping, make your own by mixing these ingredients together in a bowl:

1/2 cup mayonnaise

2 Tbsp. finely chopped dill pickle

1 green onion, thinly sliced

1 Tbsp. drained capers, coarsely chopped

1 Tbsp. chopped fresh parsley

1 tsp. lemon juice

1/2 tsp. Dijon mustard

1/2 tsp. chopped fresh tarragon, or pinch dried

Salt, pepper and hot sauce to taste
